Ingredients:

  • 1 whole chicken 
  • 2 lemons, sliced.
  • 4 cloves garlic, minced.
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions:

  • Preheat the oven to 425°F (220°C).
  • Remove the giblets and excess fat from the chicken cavity, rinse the chicken inside and out, and pat it dry with paper towels.
  • Black pepper, chopped garlic, salt, olive oil, salt, dried rosemary, and dried thyme should be mixed in a small bowl.
  • Rub the chicken inside and out with the garlic and olive oil mixture.
  • Place the lemon slices inside the chicken cavity.
  • Arrange the remaining lemon slices around the chicken in a baking dish or roasting pan.
