Russian Beetroot Salad Recipe with Tons of Vegetables

Russian Beetroot Salad is a great option if you want to prepare a salad that is both healthy and tasty. Here’s a recipe for a Russian Beetroot Salad with lots of vegetables:

Serves: 4, Preparation time: 5 minutes, cooking time: 40 minutes 

Ingredients:

• 3-4 medium-sized beetroots

• 1 large carrot

• 1/2 small red onion

• 1 small cucumber

• 1/2 small red bell pepper

• 1/2 small yellow bell pepper

• 1/4 cup chopped fresh dill

• 1/4 cup chopped fresh parsley

• 1/4 cup chopped fresh chives

• 1/4 cup sunflower oil

• 2 tablespoons apple cider vinegar

• 1 tablespoon Dijon mustard

• Salt and pepper, to taste

Instructions:

• Preheat the oven to 375°F (190°C).

• Peel and trim the beetroots and chop them into small bite-sized pieces. Place the beetroots on a baking sheet and drizzle with a tablespoon of sunflower oil. Roast in the oven for 35-40 minutes, or until the beetroots are tender when pierced with a fork.

• While the beetroots are roasting, peel and grate the carrot. Thinly slice the red onion. Dice the cucumber, red bell pepper, and yellow bell pepper into small bite-sized pieces.

• In a small mixing bowl, whisk together the remaining sunflower oil, apple cider vinegar, and Dijon mustard. Add salt and pepper to taste.

• Once the beetroots are roasted and cooled slightly, transfer them to a large mixing bowl. Add the grated carrot, sliced red onion, diced cucumber, diced red and yellow bell pepper, and chopped herbs. Toss everything together to combine.

• Pour the dressing over the salad and toss again until everything is coated in the dressing.

• Let the salad sit for at least 15 minutes to allow the flavors to meld together.

Serve the salad chilled or at room temperature, garnished with additional chopped herbs if desired.
