Ingredients:

  • 1 whole chicken
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lemon, halved.
  • 1 head of garlic halved crosswise.

Instructions:

  • Preheat the oven to 425°F (220°C).
  • Remove the giblets and excess fat from the chicken cavity, rinse the chicken inside and out, and pat it dry with paper towels.
  • In a small bowl, mix the salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary.
  • Rub the chicken inside and out with olive oil, then sprinkle the spice mixture all over the chicken, making sure to get some under the skin as well.
  • Stuff the chicken cavity with the lemon halves and garlic head halves.
  • Put the chicken in a cast-iron pan, breast side up.
  • Keep the chicken in the oven for 60–75 minutes, checking the temperature to make sure it reaches 165°F (75°C) in the thickest section of the flesh.
  • Take the pan out of the oven, and after ten to fifteen minutes, carve the chicken after allowing it to rest.

Serve the chicken with your favorite sides, such as roasted vegetables, mashed potatoes, or a side salad.
