INGREDIENTS

  • Butternut squash
  • Olive Oil
  • Moroccan spice powder
  • Onion
  • Carrot
  • Coconut oil
  • Lemon grass
  • Ginger
  • Garlic
  • Coconut milk
  • Soy sauce
  • Coconut sugar
  • Chickpeas
  • Spicy curry paste
  • Baby greens
  • Baby spinach

INSTRUCTIONS

  1. Take a cleaned butternut squash and cut it at both ends.
  2. Now, cut it into two slices and remove the seeds.
  3. With a knife, mark the lines diagonally on both slices.
  4. Pour olive oil to cover the slices.
  5. Sprinkle Moroccan spice powder, nutmeg powder, cumin powder, salt, and pepper powder over the slices.
  6. Spread all these powders across the butternut squash slices and roast for 50 minutes.
  7. In a pan, add 2 tablespoons of coconut oil and once it is heated, add the chopped onion and carrot that is cut. Fry them nicely.
  8. Once they are fried, add the spicy curry paste, and mix it well with the carrots and onions that are getting fried.
  9. Add the chopped lemongrass, ginger, and garlic to this mixture and mix well.
  10. Once they are mixed well, add the coconut milk, coconut sugar, and soya and mix them well.
  11. Put the chickpeas and let them boil well.
  12. Once the chickpeas are cooked, add baby spinach, baby greens and mix well to get cooked better.
  13. Spread this mixture over the roasted butternut squash slices and mix the slices with the curry.
  14. Roast it again for 2 minutes and enjoy the Stuffed Butternut Squash With Chickpeas.
