Ingredients:
- 500g white fish fillets, cut into bite-sized pieces
- 400ml coconut milk
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 2 eggs, beaten
- 2 tbsp red curry paste
- 1 cup sliced mushrooms
- 1 cup sliced red bell pepper
- 1 cup sliced green beans
- 2 kaffir lime leaves
- 2 tbsp vegetable oil
- Banana leaves, for steaming (optional)
How To Prepare This Recipe:
- In a bigger bowl, mix the red curry paste, fish sauce, and palm sugar until well combined.
- Add the coconut milk to the bowl and stir until the mixture is smooth.
- Add the beaten eggs to the bowl and whisk until well combined.
- Add the fish, mushrooms, bell pepper, and green beans to the bowl and mix until the vegetables and fish are evenly coated with the curry mixture.
- Add the kaffir lime leaves to the bowl and mix well.
- If using banana leaves, cut them into 20cm squares and use them to line four individual-sized bowls. Otherwise, use a greased oven-safe dish.
- Stir the fish and vegetable mixture into the bowls or ramekins, filling them about three-quarters full.
- Steam the fish amok for 20-25 minutes until the fish is cooked through and the curry mixture is set.
- Serve the fish amok hot with steamed rice.
