- 500g boneless chicken breast, cut into bite-sized pieces
- 2 tbsp green curry paste
- 400ml coconut milk
- 1 cup chicken stock
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced bamboo shoots
- 1 cup sliced mushrooms
- 2 kaffir lime leaves
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 1/4 cup fresh basil leaves
- 2 tbsp vegetable oil
How To Prepare This Recipe:
- Heat the oil in the larger skillet over medium-high heat. Add the green curry paste and stir for 2 minutes until the fragrance spreads.
- Mix the chicken to the skillet and stir-fry for 2-3 minutes until slightly brown.
- Add the sliced bell peppers, bamboo shoots, mushrooms, kaffir lime leaves, fish sauce, and palm sugar to the wok. Stir-fry for another 2-3 minutes.
- Pour in the chicken stock and coconut milk and bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes until the chicken is cooked through and the vegetables are tender.
- Add the fresh basil leaves to the skillet and stir-fry for another minute.
- Serve the Thai green curry hot with steamed rice.
