Vegetable fried rice is a popular Chinese dish that is both delicious and easy to make. The dish typically consists of rice that is stir-fried with a variety of vegetables, such as carrots, peas, and onions, along with soy sauce, garlic, and ginger.

Ingredients:

  • 2 cups cooked long-grain rice, chilled
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic minced cloves,
  • 1 cup mixed vegetables (carrots, peas, corn, green beans)
  • 2 beaten eggs,
  • 2 tbsp sauce of soy
  • 1 tbsp oyster sauce
  • 5 gms sesame oil
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

How To Prepare This Recipe:

  • Heat the vegetable oil in the larger wok or skillet over high heat.
  • Add the onion and garlic to the wok and sauté for 3 minutes till the smell is fragrant.
  • Add the mixed vegetables to the wok and stir-fry for 2-3 minutes until tender.
  • Shift the vegetables to the wok’s left side and pour the beaten eggs into the right.
  • Scramble the eggs until cooked through.
  • Add the chilled rice to the wok and stir-fry for 2-3 minutes until heated through.
  • In a small bowl, mix the soy sauce, oyster sauce, sesame oil, salt, and pepper.
  • Pour the sauce over the rice and stir-fry for another 2-3 minutes until the rice is evenly coated.
  • Garnish the fried rice with chopped green onions and serve hot.
