Moukhbaza is a traditional meal that can be traced back to the eastern part of Sudan. This recipe is both straightforward and delectable; it consists of beans and vegetables that have been braised together in a savory broth that is based on tomato. This recipe is simple to make, and it is an excellent choice for a supper that is both wholesome and filling.
Ingredients:
- 200 grams of dried black-eyed beans reconstituted the next day after soaking overnight.
- 1 chopped onion in total.
- 2 tomatoes, chopped. Count them.
- 2 garlic cloves, chopped, and set aside.
- 1 green bell pepper, chopped.
- 1 red pepper, chopped for your salad.
- 1 carrot, cut down to size.
- 30 g tomato paste
- 30 g of extra-virgin olive oil
- 5g paprika
- The water may be seasoned with salt and pepper as desired.
Instructions:
- After soaking, drain the black-eyed beans and give them a last rinsing in cold water.
- The olive oil should be heated in a substantial big saucepan on medium heat. After adding the onion and garlic, continue to sauté the mixture until the onion becomes translucent.
- Cook the chopped tomatoes and tomato paste in the saucepan for a few minutes, or until the tomatoes have become more pliable, whichever comes first.
- To the saucepan, add the chopped bell peppers and carrot, along with the cumin powder, paprika, salt, and pepper, and stir to mix everything.
- Put the black-eyed beans that have been soaking in the saucepan and add enough water to cover them by about an inch. Bring the pot to a boil.
- Boil the mixture, and then reduce the heat, allow it to simmer for around 45–60 minutes, or until the beans have reached the desired level of tenderness.
Prepare and serve hot, along with some bread or rice.
