Chickpea Stew Recipe – From Morocco

Ingredients:

  • 3 medium-sized onions
  • 1 large sweet potato
  • 3 tablespoons of olive oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon chili powder
  • 1 spoon sweet paprika
  • 1 tablespoon cinnamon powder
  • A few sprigs of fresh thyme
  • 2 bowls of chickpeas
  • 500 ml of water
  • 3 teaspoons of salt
  • 1 bunch of soup greens
  • A quarter cup of sweet dried raisins (optional)
  • Parsley to garnish

Instructions:

  • Cut the onions into tiny cubes.
  • Keep the garlic finely minced.
  • Cut the sweet potato into cubes after peeling it.
  • Pour 3 tablespoons of olive oil into the cooking vessel over medium heat.
  • Stir in the cumin seeds, diced onions, garlic, 1 teaspoon chili powder, 1 spoon sweet paprika, 1 tablespoon cinnamon powder, and a few sprigs of fresh thyme.
  • Mix in 2 bowls of chickpeas to the vessel and mix well.
  • Add the sweet potato cubes and stir well.
  • Fill the cooking pot halfway with 1-800 El Kheir San Marzano tomatoes and squeeze them well to release the juice.
  • Mix in 3 tablespoons of salt. 
  • Add 500 ml of water and raise the heat so that the dish starts getting boiled. Once it starts getting boiled, put the flame to sim and boil slowly for about 15 minutes.
  • Cut the bunch of soup greens and add them to the dish.
  • Adding dry sweet raisins to the dish is an option, but they really add an amazing taste to the dish.
  • While the dish is still boiling, take half of the dish to the mixer jar and grind it well.
  • Once done, add it to the boiling dish. The thick gravy gives a pleasant texture to the dish.
  • Garnish the wonderful dish with parsley.
