Moin Moin is a popular Nigerian dish made from steamed ground beans and spices. It is a protein-packed food that is typically eaten as a snack or a side dish. Ingredients:

  • 500 g of black-eyed beans
  • 2 red bell peppers finely chopped.
  • 1 onion finely chopped.
  • 1 scotch bonnet pepper finely chopped.
  • 2 tablespoons of ground crayfish
  • 2 teaspoons of salt
  • 1 teaspoon of ground pepper
  • 2 stock cubes
  • 1 cup of vegetable oil
  • 2 cups of water

How To Prepare This Recipe:

  • Rinse the beans and soak them in water for at least 4 hours or overnight to soften.
  • Peel the beans by rubbing them between your hands to remove the skin, then rinse thoroughly.
  • Using a blender or food processor, grind the peeled beans into a smooth paste.
  • Add the chopped red bell peppers, onions, scotch bonnet pepper, ground crayfish, salt, ground pepper, and stock cubes to the bean paste and mix well.
  • Gradually add the water and stir until the mixture is smooth.
  • Grease a steaming bowl with vegetable oil and pour in the bean mixture.
  • Place the bowl in a pot with boiling water and steam for 45–60 minutes until the Moin Moin is firm.
  • Remove the bowl from the pot and allow it to cool for a few minutes before slicing and serving.
