Traditional Moroccan Tagine

Here is a recipe for a classic chicken and vegetable tagine:

Ingredients:

  • 4 chicken thighs, skin on
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup green olives
  • 1 preserved lemon, sliced
  • 2 carrots, sliced
  • 1 sweet potato, peeled and diced
  • 1 zucchini, sliced
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Mix the ginger, cumin, paprika, cinnamon, cayenne pepper, salt, and black pepper in a small size bowl.
  2. Season the chicken thighs with the spice mixture and set aside.
  3. Start Heating the olive oil in a tagine or large pot over medium heat.
  4. Add the onions, garlic, and sauté for 3-4 minutes until soft and translucent.
  5. Put the chicken thighs into the pot and golden brown them on both sides for about 5 minutes.
  6. Pour in the chicken broth and get the mixture to a simmer.
  7. Add the olives, preserved lemon, carrots, sweet potato, and zucchini to the pot and combine.
  8. Cover the Tagine or pot and simmer for 45-50 minutes until the chicken is cooked and softens and the vegetables are tender.
  9. Decorate with fresh parsley and serve hot with crusty bread or couscous.
