  • 1 nori sheet
  • 1/2 cup of cooked sushi rice
  • 1/2 avocado, sliced
  • 1/2 carrot, julienned
  • 1/2 cucumber, julienned
  • 1/4 mango, sliced
  • 1 tablespoon of tamari or soy sauce
  • Wasabi, pickled ginger, and sesame seeds for garnish (optional)

Instructions:

  1. Lay the nori sheet shiny-side down on a clean surface.
  2. Spread a thin layer of sushi rice over the nori sheet, leaving a 1-inch border at the top.
  3. Arrange the sliced avocado, julienned carrot and cucumber, and sliced mango on top of the rice in a straight line across the middle of the nori sheet.
  4. Drizzle tamari or soy sauce over the vegetables.
  5. Wet the top border of the nori sheet with water using your fingertips or a brush.
  6. Carefully roll the nori sheet, starting at the bottom edge and rolling away from you, tucking the filling in.
  7. Once you’ve rolled the sushi, use a sharp knife to cut it into 6-8 pieces.
  8. If desired, serve the sushi rolls with wasabi, pickled ginger, and sesame seeds.
