Shakshuka with Merguez Sausage From North Africa

Shakshuka is a popular North African breakfast, brunch, or dinner dish. This flavorful and hearty dish consists of eggs poached in a rich tomato sauce with onions, peppers, and spices. It can be served independently or with crusty bread, pita, or other grains. In this recipe, we will add merguez sausage for an extra layer of flavor and protein.

Recipe: Shakshuka with Merguez Sausage

Ingredients:

  • 4 large eggs
  • 450 grams merguez sausage, removed from casings and crumbled
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 1 can (793 grams) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste
  • Olive oil
  • Fresh parsley, chopped (optional)

Directions:

  1. First, heat a large skillet on medium heat and add olive oil.
  2. Add the crumbled merguez sausage and cook it until it turns brown, using a wooden spoon to break it into pieces as it cooks.
  3. Remove the sausage from the skillet and put it aside.
  4. Now, in the same skillet, add chopped onion and bell peppers and cook until they become soft and start to brown.
  5. Add minced garlic and cook for a minute or until it smells nice.
  6. Next, add a can of diced tomatoes and all the spices, and stir well to combine. Allow the mixture to simmer until it thickens slightly, for about 10 minutes.
  7. Make four shallow holes in the tomato mixture with the back of a spoon.
  8. Carefully crack an egg into each hole. Cover the skillet with a lid and let the eggs cook until the whites are set and the yolks are still soft, which should take 5-7 minutes.
  9. Finally, sprinkle the cooked sausage over the shakshuka and add fresh parsley as a garnish.
  10.  Serve it while it’s hot, and enjoy!
