Koshari: The Iconic Vegetarian Dish – From Egypt

Ingredients:

  • 250 g short-grain rice
  • 250 g brown lentils
  • 140 g macaroni

  • 2 tablespoons (30ml) vegetable oil
  • 15 g of ground cumin
  • 15 g of cinnamon
  • 7-8 g of ground allspice
  • 400 g diced tomatoes
  • 60 milliliters of white vinegar
  • Salt and pepper, to tast

Instructions:

  • Rinse the rice and lentils and cook them separately in boiling water until tender. Drain and set aside.
  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a large pan, heat the oil over medium heat. Add the chopped onions and cook until they become golden brown.
  • Add the garlic, cumin, cinnamon, and allspice to the onions and sauté for a minute.
  • Add the diced tomatoes, white vinegar, salt, and pepper to the mixture. Heat it until it reaches a boiling point, then reduce the heat to low and allow it to simmer for about 10 minutes.
  • In a serving dish, layer the rice, lentils, and macaroni on top of each other.
  • Pour the tomato sauce on top of the layered rice, lentils, and macaroni.
  • Top with crispy fried onions.
