Authentic Jollof Rice Recipe – From Nigeria

Ingredients:

  • 500g long-grain rice
  • 800g canned chopped tomatoes

  • 2 scotch bonnet peppers, chopped (optional) (about 10g)
  • 30g tomato paste
  • 30g dried thyme
  • 15g smoked paprika
  • 30g curry powder
  • 15 ground ginger
  • 15g ground nutmeg
  • 60ml vegetable oil
  • 1 teaspoon salt, or to taste
  • 750ml chicken or vegetable stock
  • 2g dried thyme

Instructions:

  • Rinse the rice: Place the rice in a large bowl and cover it with water. Swirl the rice around with your hand to remove any excess starch. To remove excess starch, drain the water from the rice and repeat this step until the water runs clear. Set the rice aside.
  • Prepare the vegetables: Heat the vegetable oil and heat a large pot or Dutch oven over medium-high heat. Once hot, add in the diced onions, minced garlic, and chopped bell peppers. Cook and stir the mixture for approximately 5-7 minutes until the vegetables are tender and fragrant or until the vegetables are soft and fragrant. Add the tomato paste, chopped tomatoes, and scotch bonnet peppers (if using) and stir to combine.
  • Season the rice: Add the dried thyme, smoked paprika, curry powder, ground ginger, and ground nutmeg to the pot and stir well to combine. Add the rice and stir to coat the grains with the tomato sauce.
  • Add the stock: Pour in the chicken or vegetable stock and add salt to taste. Stir to combine.
  • Pot of rice on low heat with a tightly-fitting lid for about 20-25 minutes, or until the rice grains are tender and have absorbed all the flavorful liquid.
  • Serve: Fluff the rice with a fork and serve hot with fried plantains, grilled chicken, or any other accompaniment of your choice.
