Ugali is a staple dish in Kenya, made from maize flour and water. It is a simple and delicious dish that is enjoyed by many East Africans. Ugali is often served with vegetables, stews, or meat dishes, and it is a filling and satisfying meal. In addition to being tasty, Ugali is also an affordable and easy-to-make dish.
Ingredients:
- Maize flour -500g
- Water – 1 liter
- Salt to taste
Instructions:
- Put the water in a saucepan of around medium size and bring it to a boil.
- Add salt to the water and stir to dissolve.
- In order to avoid lumps from developing, add the maize flour to the water that is already boiling in increments while stirring continually with a spoon made from wood.
- Continue stirring the mixture for another ten to fifteen minutes after the heat has been lowered to a low setting until it becomes thick and separates from the edges of the pot.
- Remove the pot from the heat and cover it with a lid.
- Let the Ugali rest for 5 minutes.
- Use a wooden spoon or your hands to scoop the Ugali out of the pot and onto a serving dish.
- Shape the Ugali into a round or oblong shape with a hollow in the middle to hold the stew or vegetables.
- Serve hot with your favorite side dish.
Note: Ugali can also be made with a combination of maize flour and millet flour, or with cassava flour.
Tip: To make the Ugali even more flavorful, you can add some butter or ghee to the mixture before serving.
