Here’s the recipe for Grilled Poulet Yassa with Roasted Vegetables:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 4 garlic cloves, minced
  • 1/4 cup Dijon mustard
  • 1/4 cup vegetable oil
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 2 bell peppers, seeded and divide into strips
  • 2 zucchini, sliced
  • 1 eggplant, sliced
  • 1 tablespoon olive oil

Instructions:

  1. Mix the sliced onions, minced garlic, Dijon mustard, vegetable oil, lemon juice, salt, and pepper in a large bowl. Introduce the chicken breasts to the marinade and coat them evenly by tossing them. Cover the bowl and marinate the chicken in the refrigerator(fridge) for at least 2 hours or overnight.
  2. Heat the grill to a medium-high temperature beforehand.
  3. Take out the chicken from the marinade and discard any leftover marinade. Proceed to grill the chicken for 6-8 minutes on each side or until it is fully cooked.
  4. While the chicken is grilling, preheat the oven to 400°F (200°C). Toss the sliced bell peppers, zucchini, and eggplant with olive oil and season with salt and pepper in a different bowl. Spread the vegetables in a single coating on a baking sheet and roast for 15-20 minutes or until tender and charred.
  5. Serve the grilled chicken with the roasted vegetables on the side.
